Singapore Sling - How to Make the Classic Tiki Drink & the History Behind It (Smuggler's Cove)
How to make the Singapore Sling, the classic cocktail made with Gin, Cherry Liqueur, Benedictine, Simple Syrup, Lemon Juice, Soda Water, Aromatic Bitters, Orange Bitters and, optionally, a lemon wheel, mint and a Maraschino Cherry for garnish. This drink was adopted as a Tiki standard and my favorite recipe comes from the handbook for the recently tikified, Smuggler’s Cove. The most popular rumor about this drink was that it was created in 1915 by Ngiam Tong Boon at the Raffles Hotel in Singapore. This creation was also supposed to be made with pineapple juice. However, most of this story was embellished or outright invented by the Raffles Hotel manager from the 1970’s. The only part of the story that was confirmable was that Ngiam worked at Raffles around the turn-of-the-century. The real story of this drink traces back to the 19th century. A Sling is a drink category that, according to David Wondrich began an American creation, but in English hands became more of a punch, which by the mid-to-late 1800’s became the standard definition of a Sling. And a sling English bartenders loved to experiment with throughout the British Empire was the Gin Sling. In Singapore (part of the Straits Settlement at the time), what would later become known at the Straits Sling or—more commonly—the Singapore Sling, was originally just referred to as the Gin Sling. Accounts of Singapore’s Gin Sling started popping up in newspaper accounts in 1897, but it was clear that they had firmly been established as part of the drinking scene by that time. The recipe appeared in print in 1913, 1922 and then in several books throughout the 1930’s. The recipes from the 30’s were all in the same ballpark measurement and ingredient-wise. This was the recipe that Donn Beach put on his menu when he established the first tiki bar, Don the Beachcomber. He had discovered the drink on his travels through the pacific in the mid-1920’s. Even though the drink pre-dates Tiki, it was definitely a staple of a lot of tiki menus. But it makes sense because it was built in the style of a punch, much like a lot of Donn’s original drinks were and just like Donn’s drinks, this one was composed of some exciting and exotic flavors. I R&D’ed this drink pretty extensively. I made half a dozen Singapore Slings from various recipes and compared them side-by-side, including one of the pineapple juice recipes. The hands-down winner was the Smuggler’s Cove recipe, which did not stray too far from the 1930’s recipes. It just added some simple syrup (or in their case rich simple syrup, but 1:1 syrup was perfect for me) to help round off some of the more tart edges of the citrus and it works like a charm. As for the garnish, it’s really up to you. I used a lemon wheel, cherry and mint, but play around with it and figure out what works best for you. It’s not like Three Dots & a Dash (https://youtu.be/A0Jbo2w9EpQ) or the Navy Grog (https://youtu.be/GBfkSqJtpSQ), where the garnish is central to the presentation, but it’s definitely something to play around with to make the drink more exotic. Recipe: 1.5 oz (45ml) Gin 0.5 oz (15ml) Cherry Liqueur 0.25 oz (7ml) Benedictine 0.25 oz (7ml) Simple Syrup 0.75 oz (22ml) Lemon Juice 1 dash Aromatic Bitters 1 dash Orange Bitters 2 oz Soda Water garnish Lemon Wheel, Mint, Maraschino Cherry (optional) Add ice and soda to the Collins glass. Shake the rest of the ingredients with ice cubes. Strain into the glass. Add garnishes and straw. They are inexplicable and elusive but have noticeable influences from bands like Jesus and Mary Chain, My Bloody Valentine and Black Rebel Motorcycle Club. Singapore Sling Cocktail Recipe from the Raffles Hotel, Singapore

And again, there are many different recipes and opinions on how to make the perfect Singapore Sling but this is one of my favourites. Take note that the recipe calls for cherry brandy - I'd recommend using Cherry Heering (a deep red cherry liqueur, sweet and a more natural cherry taste) or kirsch (a clear coloured cherry brandy, slightly bitter due to the pitts that are also used). Marashino liqueur will impart less cherry flavour, a few herbal notes and some slight bitterness. How to Make The Singapore Sling - Best Drink Recipes
The Singapore Sling is a South-East Asian cocktail. This long drink was developed sometime before 1915. by Ngiam Tong Boon, a Hainanese bartender working at the Long Bar in Raffles Hotel Singapore. It was initially called the gin sling, - a sling was originally an American drink composed of spirit and water, sweetened and flavored. D. A. Embury stated in the Fine Art of Mixing Drinks: "Of all the recipes published for [this drink] I have never seen any two that were alike." The Times described the "original recipe" as mixing two measures of gin with one of cherry brandy and one of orange, pineapple and lime juice. An alternative "original recipe" used gin, Cherry Heering, Bénédictine, and fresh pineapple juice, primarily from Sarawak pineapples which enhance the flavor and create a foamy top. The hotel's recipe was recreated based on the memories of former bartenders and written notes that they discovered regarding the original recipe. Recipes published in articles about Raffles Hotel before the 1970s are significantly different from current recipes, and Singapore Slings drunk elsewhere in Singapore differ from the recipe used at Raffles Hotel. By the 1980s, the Singapore Sling was often little more than gin, bottled sweet and sour, and grenadine. With the move towards fresh juices and the re-emergence of quality products like Cherry Heering, the cocktail has begun to resemble its original version.

It’s a, interesting drink because supposedly develop in 1915 in Raffles Hotel in Singapore by a Chinese bartender whose name I can’t pronounce that’s the folklore about it, nobody really knows if that’s true or not or where it came from but it’s basically a base drink with a lot sweeteners on it, rest of the folklore goes to that there’s no two recipes are the same and so at the Kitty came up with the recipe that supposedly the original recipe but it’s tough to say because you go in any bars restaurant and you never gonna be the same to drinks but they will be similar in that Gin, Lime Juice, and cherry brandy which is the three main ingredients, we start with Napoli Grande Glass, which is the closest thing we have to Hurricane glass, we’ll fill that with ice, today will be using the Beefeater Gin, about two and a half ounce of Beefeater five count depending on where you at, Cherry Brandy will be the second ingredient which is even about an ounce and a half with cherry brandy, Cointreau which is an orange base liquor and Benedictine which is an old monk recipe liquor a little less than an ounce, Grenadine just a splash of color couple dashes of bitters and i’m gonna put some fresh squeeze limes in there, it’s about half a lime i’ll cut the line in half cut it in a smaller parts to a takee it easier to squeeze, we’ll finish it of with pineapple juice and i’ll shake the whole thing up, mix it up and then garnish it with the cherry and a large straw and that’s you traditional Singapore Sling, it’s close that I can get to the original recipe.

One of the top highlights was visiting the various districts including Chinatown, Little India and Kampong Glam. Hopping on a traditional bum boat offered a unique perspective of the city as we were able to learn more about its colorful history on our guided tour. One of the highlights was drinking Singapore Slings at the Raffles Hotel where the drink was invented. Paying 27 Singapore dollars allowed us to sip on this wonderful cocktail and throw peanuts on the floor. Generally speaking, I'm a proponent of slow travel. Traveling slow allows you to live more like a local as opposed to racing around a city like a tourist; however, with just 48 hours in Singapore we were forced outside of our comfort zone, for a couple of days, and we ended up loving it. The fast paced (and futuristic) elements of the city were conducive to our mission of seeing as much as we possibly could in such a short period of time. With mere hours as opposed to days to explore the city we set out on foot, by bus and via boat to explore as much of the city as possible. Although we visited many of the main attractions it was our time spent wandering around neighborhoods such as Kampong Glam (the historic Malaysian quarter) that were my favorite moments in the city. As one of the most livable cities in all of Asia it is also one of the most expensive. If in the future I had a high paying position I would consider coming to Singapore as an expat as opposed to being just a tourist. Singapore is impressive by day but really shines at night. Many of the standout landmarks have a completely different look when the sun goes down and the bright lights of the city emerge. When it comes to street food Singapore ranks favorably with Korea, Malaysia, Taiwan and Thailand. Hawker centres offer up a spread of Asian delights that were heavy on flavor while being light on our wallet. In order to cover as much ground as possible we purchased hop on hop off bus tickets to get around the city. Being able to get on and off whenever we wanted was a real bonus as it helped us preserve our walking legs. Although we saw many of the most popular attractions such as Merlion, Marina Bay and the Fullerton Hotel it was the adventures we had wandering around that formed the greatest impressions of the city. Overall, our time in Singapore was distinctly memorable. Hopefully, we'll have a chance to come back again soon to explore more of this impressive 21st century city state. Raffles Singapore Long Bar Singapore Sling, The Singapore Sling is a South-East Asian cocktail. This long drink was developed in 1915 by Ngiam Tong Boon, a Hainanese bartender working at the Long Bar in Raffles Hotel Singapore. It was initially called the gin sling, - a sling was originally an American drink composed of spirit and water, sweetened and flavoured. The "original recipe" is mixing two measures of gin with one of cherry brandy and one of orange, pineapple and lime juice An alternative "original recipe" used gin, Cherry Heering, Bénédictine, and fresh pineapple juice, primarily from Sarawak pineapples which enhance the flavour and create a foamy top. Most recipes substitute bottled pineapple juice for fresh juice; soda water has to be added for foam. The hotel's recipe was recreated based on the memories of former bartenders and written notes that they discovered regarding the original recipe. One of the scribbled recipes is still on display at the Raffles Hotel Museum. Recipes published in articles about Raffles Hotel before the 1970s are significantly different from current recipes, and Singapore Slings drunk elsewhere in Singapore differ from the recipe used at Raffles Hotel. The current Raffles Hotel recipe is a heavily modified version of the original, most likely changed sometime in the 1970s by Ngiam Tong Boon's nephew. Today, many of the Singapore Slings served at Raffles Hotel have been pre-mixed and are made using an automatic dispenser that combines alcohol and pineapple juice to pre-set volumes. They are then blended instead of shaken to create a foamy top as well as to save time because of the large number of orders. However, it is still possible to request a shaken version from bartenders. By the 1980s, the Singapore Sling was often little more than gin, bottled sweet and sour, and grenadine. With the move towards fresh juices and the re-emergence of quality products like Cherry Heering, the cocktail has begun to resemble its original version Thank you for watching. Its history began in 1819 with Thomas Stamford Raffles, a young official who worked for the British East India Company. Raffles estimated that the natural harbor was perfect for trading ships, so he bought the land from the Sultan of Johor and founded a trading settlement. As a free port, Singapore attracted trading ships from all over the world and today, 4 million people live here on an area that covers 640 square kilometres. In June each year, there is an exciting boat race in Marina Bay known as the Dragon Boat Race, that features magnificently painted dragon boats with hand-carved heads and tails accompanied by the sound of frenetic drumbeats.
